caesar salad with garlic

2 ounce chopped anchovies
1 tablespoon minced garlic
1/4 cup lemon juice
4 egg yolks
1/2 cup grated parmesan cheese
1 cup olive oil
24 cups torn romaine lettuce leaves
2 cups croutons
2 teaspoons pepper
8 anchovies
1/2 cup shaved parmesan cheese

Mash anchovies and garlic to a paste. Whisk in lemon juice. Whisk in egg. Stir in grated cheese. Whisk in oil. Blend. Add lettuce, croutons and pepper. Toss. Top with whole anchovies and shaved parmesan.
